• Humidity. An important indicator, the discrepancy of which can affect the further processing of raw materials. With an increased moisture content, the energy value of wheat will be underestimated.
• Uniformity. According to the variety, the wheat grains must be of the appropriate size and shape. The heterogeneity of the product leads to the complication of the process of its further processing.
• Smell. Quality grain is practically odorless. Improper storage of products can cause rot, mold or malt odors. Also, the grain crop is capable of absorbing foreign odors, such as wormwood, garlic, and so on. This deteriorates the presentation of the product.
• Impurities. Wheat may contain grain and weed impurities. The deterioration of quality is more influenced by weed admixture. The presence of stones, burnt grains, sand and other debris makes processing more difficult and leads to a lower volume of products in the final result. Grain impurity has nutritional value, therefore, up to 15% is allowed in stock.
• Taste. It is not a required criterion during verification. If it is impossible to determine the quality of grain by smell and appearance, only if this method is used. A sweetish taste can appear in products with sprouts, bitterness – with rotting, sourness – in the presence of mold.
• Damage by pests. When a grain crop is damaged, its quality characteristics deteriorate, eaten grains, larvae, insect corpses and so on can be observed. And exceeding the permissible rate for one the area can lead to an increase in the temperature balance and, as a result, self-heating of the grain occurs.
